张龙，工学博士，高级工程师，食品科学与工程专业。

主要研究方向：果蔬、谷物食品发酵、果蔬贮藏保鲜。

产业化实践：2009年开始学习果酒、果醋、酵素发酵技术，2011年批量加工果酒时跟随导师和技术人员实操训练。2012年参加工作，独立设计果酒和果酒蒸馏酒生产线2条、制定生产工艺和产品技术标准。2019至今，优化果蔬、谷物食品发酵工艺，实现桑果酒、蓝莓酒、桑果酵素等批量加工、销售，积累了一些从技术开发到产业转化的经验。近年来采用新的发酵理念和菌种，力求改善发酵食品风味、提升营养价值。

上的课程：

《食品加工与保藏原理》、《果酒酿造与品鉴》、《食品机械与设计》等，参与《高级食品化学》《专业综合实验》等课程。

学生培养：

指导本科生毕业论文/设计：2024年5人；2025年6人。

研究生：2人。
